How bad would the microstutter be? I feel like it would end up being so consistent you'd really be averaging around 40 FPS.

It is not just microstutter. If you check benchmarks, 4 GPUs typically perform the same, or WORSE, than 3 GPUs.
You are actually harming your performance, when you have 4 GPUs.
Buy 1 max. Sli is far better supported than crossfire, but when it works it's legit fast. Frame times are less relevant when you've got a free sync monitor with 144hz. I was going to go 4k but 60hz just isn't enough after playing most games at >100fps
