If they have spyware on your computer, they could still see what you're doing. But if they just took your computer, they couldn't crack the encryption and see what's on it.

Your best bet is to choose another hardware vendor and choose a thinkpad or elitebook pre 2008 if you don't care about performance. Then install your OS in a headless luks mbr partitioned disk.
