Because like any other profession, we benefit from vastly more efficient communication by developing our own lingo.
That and we're forced to continually cycle it out for new lingo whenever idiots start misusing the terms and and we need a way to easily distinguish ourselves from said idiots because highly contextual language is otherwise easily misinterpreted until hopefully eventually becoming clear that we're talking to a know nothing noob.
