What would be a better mobo choice for gaymen, Micro ATX or Mini ITX, coupled with a full sized GPU and modular PSU, The last time I checked the Mini ITX boards and some problems with power.

For a full sized GPU, at least mATX. If you put an ITX board on an ATX case with a big GPU it's gonna look retarded.
Mini ITX are perfectly fine, really. I have one with a full sized gpu and fully modular PSU with no problems. All you have to do is check up on the case you're aiming to get and see the dimensions with regard to GPU length and that's all there is to it
