How do I backup a Linux system? I know I could just tar all of /etc/ and /home/, but it'd be nice not to have to reinstall everything. Full disk image isn't an option because this is a vps.
Pic unrelated.

Make your backup through your VPS control panel.
Pretty much any VPS provider worth the cost has this option somewhere. I am limited to two full backups, if i want more i gotta pay, but two backups are more than enough for the price i'm paying.

I can, but not only is that extra $$$ but also vendor lock-in. What if I want to store the backup myself, and possibly re-deploy it to a different provider?

Do you have recovery console access?

Rsync over ssh, or even use rsnapshot if you want regular backups

rsync -avzx / user@destinationhost:/
