Witcher 3 is more demanding, but Crysis 3 is not that far behind. Either will work perfectly fine as a "GPU crusher" benchmark.
For CPU-bound games, you will get better performance with the i3 4170. However, the majority of games are far more GPU-reliant, so your performance will be closer to whatever tier that GPU is in.

Right now I am looking to buy a 1080. However I really want to spring for 1080 sli. I know the performance wont be +100% but I'm having trouble pulling the trigger(availability aside). I see the suggested 2x 1080 on the site (with the warning) however I'm still on the fence. Assuming I can plan for the heat/noise/power, how much love does SLI get. Can I expect everything more than a year old to support 50%+ gains in performance with sli? Or will I be paying for $1300 for a single 1080 most of the time?

SLI/CF is for people who need more than what one card can provide. You need to ask yourself if you actually need all that power. If you are new to building PCs, or are unsure about SLI, then buy one card and use it. You may find that it is adequate, and you do not need a second card after all.
1080 SLI is for Witcher 3 Ultra on 4K, or on 1440p@144Hz. Does that sound like what you want to do?

zen is the wild card and could very well replace the entire lineup from i7 6900 down at best, from the 6850 where i believe they will perform down, or a worst case 6700 down.
from 200+ if the performance is on the low end amd will sell it between 300-400$ and those 8 cores 16 threads would justify themselves in any build just on future proof (a 6-8 year life span for the cpu) alone.
on the gpu side... there is a good chance you will see 2x480s once they come out on the list. from outstanding to enthusiast, but it wont be till vega that you see more amd.
