None unless you plan on changing the cooler by yourself. Get a good board partner card. They run quieter and less hot with often some factory OC applied if you care for that sort of stuff.

No, it's just about 10db louder than the non reference cards due to being a blower. Unless your rig is an open test bench, I doubt you'd be able to hear it over your case fans unless you've got a full stack of Noctuas or Gentle Typhoons

Looking at the 1080 they tend to get about an extra 5fps out the box, but overclock a lot worse on the whole. The new cards have very little headroom for overclocking out the box as it is.
Their voltage is hardlimited by the bios and almost all cards are unstable above 2.1GHz apart from the lucky few which won the silicon lottery.
The reference fans a shitload quieter than older models as well. Apart from the slight premium you're paying it's not as bad an investment as people are making out.

You can get a rough idea by comparing reference 980's to non-reference. The new reference cards by nVidia are actually fine, compared to reference cards of 2014 and earlier. But the non-reference cards will be cheaper, quieter, and cooler.
