In the boot section the boot mode is grayed out and I can't change from UEFI. What gives?

You need to disable Secure Boot first (it's sometimes called like Windows 8 Support or Windows Function or something like this). Then reboot and you should be able to switch from UEFI to Legacy+UEFI or CSM, depends how your manufacturer call it. In this mode you should be able to use both UEFI and legacy devices, so that your boot selection menu should look like

You should select the entry without "UEFI" in it's name to boot in legacy mode. Also, under USB controller settings check if Legacy support is enabled.
