I was eagerly waiting for Polaris but after seeing that, I think I'm going to be buying an Nvidia card for the first time since the GTX 280. I have 2 290x's with no water cooling.
I had to buy a new PSU but that was it. The issue with crossfire is support, not cooling.
When a game has CF support it is the greatest thing ever but 90% of games dont. After actually using crossfire id rather just have a single full retard card.
Its kinda like eyefinity. I had 3 1080p screens but i much prefer using 1 1440p 144hz display because it's easier and works better and games support a screen, not all games support 3.

Electric bill difference between a 780ti and a rx 480 has to be like $10 per year.
The only advantages to less power that a dekstop user would care about are more OC headroom, easier to CF/SLI, and on the low end, using PCIE power like the 750ti / custom 950's

You are correct, but even super power hungry cards (r9 290) ran well within safe temps. Nobody can tell the difference between their card running 35c and 75 except maybe some fan noise, which is usually drowned out by case fan noise any way.

But lower temps are definitely better for the longevity of your parts. Sure, you could get a GPU with a blower style fan that keeps the rest of the computer cooler by ejecting the hot air from the GPU outside of the system, but it's worse at cooling the GPU itself. All else being equal, lower temps and lower power draw are very attractive. It leaves more room for overclocking or lets your system run cooler and all that.
