So, what are my best options if I don't want an Android / Iphone / WP.

I don't do fancy things with my phone.

Jolla was an interesting option, but it's sold out.

Your three choices are Sailfish, Ubuntu Touch, or Tizen. Of the three only Sailfish doesn't have officially-supported devices available for purchase. All three lack features, however having used all three, Sailfish is by far the most polished and closest to being a product rather than a development preview.
