Don't install updates while you're doing any important work that will take longer than 10 hours.
Instead of disabling windows update, set your connection to metered and windows update won't download/install anything without your permission. This will also prevent the store from downloading updates for apps (which will reinstall default apps you might have removed).

To be fair, this will only happen if you actually use the windows store. Which almost nobody does, because it's pretty much shit. You can uninstall the store app if you want to.
