If you think every app has the same UI on iOS then you've clearly not seen many of the apps in the store, there's a very diverse selection.

It's a closed box because when you ship something open by default it almost always leads to disaster. I know you like to think you're smart enough to manage your phone's OS (along side you desktop OS) but you aren't. Having sandboxed applications that need to pass through review is a good thing, if you really want to call a private API or do something super out there you could always distribute the source code and allow people to install it from their Macs.
