It downloads automatically when you choose to restore by cloud.
Alternatively, make a backup in your HD via itunes. It create a file somewhere just google it.

You make the mistake of assuming icloud is a proper cloud-based backup service.

It's a gimped Apple cludge that is designed solely for their use. They will only allow downloads of data for the FBI
