I did everything fullscreen for a long time, but broke the habit as screens got larger + higher resolution. It just doesn't make sense to have a browser 2560px across, and using it like this is basically equivalent to having two monitors/workspaces.
Of course, now that i'm used to doing that, i do it on my 1366x768 screen as well. But to answer your question, I think it's more "normal" to work with single windows full-screened, since that's what I see most people doing IRL.
