So since the Digital River links are now dead, whats a good way to obtain an untouched Windows 7 ISO without a product key?

You identify the exact name and sha-1 hash of the iso you want from msdn website.
Then you search on the web and on torrent sites for the iso,don't use google.
When you download the iso confirm its sha-1 hash matches that of msdn iso.
In the case of win7 all editions are ~same,only the ei.cfg file is changed.So download any edition like home,pro,ultimate,enterprise ,32 or 64 bit ,then you can easily change what edition to install.
