I want to boot a live cd on a box and look at the code.
But its a virtual machine I shouldn't have access to. Is it possible to monitor setting changes on a Hyper-v virtual machine?
Can't you just mount the virtual drive?

There are ext4 drivers for windows. Otherwise boot a livecd on your machine.

I can't change the core HV because I do know that is monitored.
What I'll do is export the VHD and move it to a server I control then boot a live CD

SCOM can monitor for changes to the VM config, yes. But I'm not sure why anyone would monitor that in real time.
If you have powershell access you can create a new VM...
