I want to get into IT but I also want a job with some semblance of physical activity
What should I do?

get over that latter desire
Work 2 jobs one in it and another in manual labor. Make more money and fulfill your request.

I'd rather not do IT than do it and be chained to a desk

That's how IT works. You're either tied to a desk or a vehicle.

i actually just started working in an office as the 'tech guy' which means setting up new systems for people, walking across the office to move computers from one desk to another, walk back, walk across again to help someone with configuring their headset, walk back, and so on and on
after a week i've walked probably 5-6 miles, with more to come
pays well too

Work as a consultant. Especially if your company is based out of the downtown core of a city, you will most likely walk from client to client. At the very minimum, you won't be stuck behind one desk all day

BBC TV CrAPITA just work off a list of addresses. The whole TV license detection van is pure scare tactics. Tell them to fuck off at the door if they don't have a warrant. Better still just ignore them and any red letters.
