NFC cards are actually fairly secure. Contactless payment is typically limited to $25 or $50 to deter fraud, which limits returns. Early cards in the US used a static value, which meant reading the card once and repeating what it said was enough to fake the card. That was really insecure. They also usually contained the cardholder name. This freaked people out especially when local news made scaremongering stories over it.
To counter this, banks switched to chips that use a dynamic CVV3 that changes based on the challenge from the terminal. Listening to the card once isn't enough as the response changes based on the query, so replay attacks are impossible. The only really feasible attack (demonstrated at Defcon 20) is to read the card with one online phone (e.g. android) and have it relay the value to an android phone while the second phone is in touch with the NFC reader. Since most people would notice if strangers are sticking Nexus phones directly against their cards/wallets, it's not a very practical attack, and from a fraud perspective, easily reversed and eaten by the issuing bank (consumer not liable).
The RFID chip also contains an account number, but it's a virtual account number that's different from the account number printed on the card, and other than the CVV3 value, no other information is reported. There is more information printed on the surface of the card (Cardholder name, account number, expiration, and CVV2 code), on the chip, and on the magstripe (name, account number, expiration, other track 1 & 2 data, CVV1 value).

With Apple Pay and Android pay becoming in things, people want to pay more with contactless in the US. Whether or not RFID enabled credit/debit cards will make a comeback is questionable, as very few banks in the US issue them nowadays.

EMV is a pretty fundamentally flawed protocol because it depends on variables by the point of sale maker being strongly random (when they're often not). Universities in the UK have written papers on it. The transaction looks cryptographically secure to the bank who denies refunds on fraudulent charges to the cardholder.
The chip is a lot harder to fake than a simple magstrip though. Merchants have botched the rollout, in being able to accept the chip and processing speeds.
As far as pin codes go, blame banks on thinking the American public is stupid/lazy. Out of ten credit cards I have, four have PINs, and out of those four, one requires a PIN, while one requires a PIN if the terminal supports it. All of the rest default to chip and signature. Even my debit card issued by Charles Schwab Bank (obviously has a PIN) defaulted to chip-and-signature transactions while I was in Germany a couple weeks back.

I don't pay very much in taxes.
My healthcare is paid for by the company I work for.
The infrastructure in my area is fine. I'm never limited by a degraded road or anything of the sort.
I get paid well. I love my job. Short hours, many weeks of paid time off, which can be taken whenever I want on short notice.
Why would I need welfare if I make good money?
If I lose my job, I've got enough money to live off of for at least 18 months. My skills are in reasonably high demand, and I've been contacted by recruiters trying to poach me.
And before you say that I was propped up by my parents, please know that I came from literal poverty and paid for my education by working in college, as well as taking no-interest loans provided by (you guessed it!) the federal government.
My loans are paid off, my car is paid off, and I'm considering buying a house. I've been to China and Germany recently for pleasure, and am planning on visiting another part of Germany again soon.
