What is objectively the best Server OS?
Is the Debian meme true? Isn't slackware more stable?

OpenBSD.
Debian is great up until you need a specific version of something. For a server you can generally count on one hand the software you need, protip: x11 isn't one.

debian and ubuntu lts are pretty sweet, but you might also want to check out alpine.

Any software you want to install has a 95% chance of having a debian section in its INSTALL file. This isn't just a coincidence.
That said, if your goal is to learn how to work in an enterprise server environment, you might want to learn RHEL/CentOS and how to host your own RPM repo where you will have tight control over how consistent the versions of software are across all your hosts. This will also give you some room to mess around with automatic updating scrips.
Before you even begin worrying about what distribution to use, make sure you are very comfortable with concepts such as iptables, compiling software and configuring install commands, NFS, LDAP, cron, bash.

Also know how to script a way to install a machine without ever interacting with the installer.

Debian is a toy because it has a cumbersome package management system that is prone to breaking, maintainers with poor judgement and outdated/buggy packages which they show no signs of ever fixing. Unlike slackware it doesn't promote users to compile their own packages and doing so is an easy way to create issues. As for arch its a toy because it has far too many maintainers who despite any good intentions are simply incapable of coordinating anywhere close enough to create anything that is not a developmental release. Its only useful for playing around with new software and not reliable in any production environment.
Opensuse and ubuntu are just poorly designed distros which pander to the lowest common denominator and hope their conveniences plastic wrap disguise their less than honorable intentions and bad code.

CentOS you get security updates for like 10 years - where as debian only 4 years.

this is indeed interesting

Ignoring the fact that "objectively" and "best" used together create an oxymoron, there is no way to determine a single best server OS because there is no single type of server.
