I'm assuming you're using Debian in a home PC. Well, you must NEVER use Debian Stable on a home home pc, they're meant for servers.

You want Debian Testing. it's the "everyday use" version. Get to that first.

Once you have the right version installed, you can update GNOME and everything else using Synaptic (GUI) or apt-get (CLI).

LMDE is Linux Mint Debian Edition. It's pretty much Debian Testing + Cinnamon preconfigured in a nice comfy .iso.

I guess I'll look into that. I'm not an expert on GRUB, can I just install LMDE to a new SSD and then have my old GRUB still work? I don't want to accidentally kill my Windows install since Windows is a huge pain in the ass to deal with.

GRUB goes before Windows loader, so you can destroy it and then reinstall it and your Windows install will still be there. Fixing GRUB is easy so don't worry if you screw up.
