Copper dissipates heat faster, brass dissipates heat slightly faster, gold a lot faster, but well yeah gold is expensive. Water dissipates heat a lot slower.

Generally, for similar designs, they perform better than Al heat sinks.
But copper is more expensive, and if you wanted to, a poorly designed Cu heat sink can cool worse than a well designed Al one.
So, other than the looks, just base a purchase decision on tests.
