It's not customizable on its own but there is Unity Tweak Tool. It's probably not up to date with the beta though, the last update in the repo was 5 months ago so it's just sitting stable

Not Unity. In Unity 7 you can only auto hide the dock. I personally recommend the Ubuntu Flavors over Ubuntu.

Ubuntu is literally the most polished distro. Mint a shit and has security flaws, Debian is nice but dated, Fedora is great but can't into media, Opensuse a shit and Arch is autistic.

The UI is fine. The application searching works fine, menu searching is really nice, multi desktop is intuitive, the main keyboard shortcuts are shown when you hit the OS key or something. I'm not a fan of docks but it works

The whole point of the video is to show how nice the UI looks and how smooth it looks. Compare it to any other distro and it literally looks years behind.
Sure, Ubuntu may not be on OS X or Window's level yet, but it's way more advanced and polished than any other distro out there.

He's using a camera because Mir probably has no screen recording software because everything has to be rewritten. Also nvidia drivers don't (yet) work with Wayland/Mir so don't plan on playing any of the 5 games available on Linux, all of which require X.
