If you want a mainstream Linux OS, install the minimal server version. From this you can install whatever gui you want.
Otherwise install arch or Gentoo.

If you're not retarded and can read the infinite number of flawless documentation, it really does 'just werk' after the surprisingly simple installation. It isn't GUI, but that doesn't mean it isn't easy.

IDK, I think people's experiences vary. I ran Arch for a while, and had an update to GNOME leave me unable to login. As far as "Just Works" goes, maybe we have different ideas in mind when it comes to manually configuring everything vs. pre-configured stuff. Not right or wrong, just different.
