x86_64 > x86 > x99

X99 pros
- enough lanes for both SLI and m.2
- quad channel means you don't need fast RAM for good throughput
- double RAM capacity
- native Xeon and ECC support on most boards
- no bendgate or math problems
Z170 pros
- RAID0 m.2 SSDs
- USB3.1 type-C on most boards
- more suitible for compact systems
- slightly cheaper
- slightly faster in single-threaded workloads
To me X99 seems to have much more upgrade potential and is a better overall choice if you want a high-end system.
Once Broadwell is out, X99 is going to get updates with new boards that will feature much of the same stuff Z170 does now, making even less sense to go that way.
