Simple: try it, then use it if you feel like it.
You may enjoy easy enviroment set-up for octave or R (single apt-get and everything is there), you may prefer 'real' matlab on windows. You may also fall in love with shell scripting and possibilities that linux holds (for example everything is a file, including higher-level hardware-driver thingies - that may prove useful), but on the other hand you may not need it at all.

There are Fortran compilers for Linux and it's not even the main language anymore. Most math students don't program a lot if at all. The few times I do it is when I use Octave or Mathematica.
