What's a good ricable alternative if I ever feel like wasting my time on theming

>implying you can't install another DE

xfce
Install gentoo

go with xfce if you want ease of use or openbox if you want more control over your theming
xfce comes with xubuntu and lxde comes with lubuntu. both of them have all the same advantages that mint has.
lxde is basically just xfce but more lightweight and centered around openbox, which means it has the option of using openbox only, which saves you from having to install it yourself.

openSUSE or Fedora.
