Because there's no workstation hardware on sale anymore, and x86 performance is poo. and i don't fancy having to recompile many packages from source...
However i do want to run HP-UX.
I can't find an Itanium motherboard with two pcie 2.0 slots.

Maybe their consumer systems, but I rather like their older workstations especially. HP always channeled their heritage as an instrument maker into their hardware and produced some pretty beautifully over-engineered kit.
The i2000 isn't their own design though, it's just a rebranded Intel reference box.
