I just ordered a SARX015 for my friend (for which I will be reimbursed). He was in the market for a "nice" watch, but not too expensive, so I showed him the SARB033 and SARB035. To my surprise he said they both looked like "cheap boring shit a bank teller would wear". He liked my SARB017 better but said the style "doesn't work" for him, which is fair comment since it is a pretty unique-looking watch.
I know the SARX has better finishing than the SARB, but I can't help thinking that it's going to be wasted on someone with the temerity to call the SARB "shit".

SARB033 is a pretty versatile watch I think. I personally have no sense of fashion, but I don't think there's much of a reason to upgrade to a SARX015 or something more expensive for daily wear. As far as the band goes, try your local watchmaker first before anywhere else. I got a fantastic leather band from mine for $20. Failing that, or if all your "watchmakers" are battery monkeys, Hadley-Roma, Hirsch and RIOS1931 are sort of the go-to brands for non-shit leather bands. There are other more niche ones like Canucklebuck (?) as well.

It was originally my great-uncle's, who fought in WWII. He bought it because it was advertised as the ultimate pilot's tool back in the 60's, which makes sense given the relationship between Wakmann and Breitling.
It's got a Valjoux 730 movement, which has day, date, month, and chrono complications.
I'm moving next week, but after that I need to find a watchmaker to do a full service, because it's been something like 35 years since it's been properly cared for.

Up to $1000 is a pretty big range, I'd maybe agree with you that Seiko is pretty indisputably one of the top few choices up to like almost $500 but once you get to that point it really opens up. Seiko is still a good option with stuff like the SAR* watches but so are brands like Hamilton or many of the microbrands in that range or Steinhart and Squale if you want a sub homage or any number of other companies.
Unless you're talking about divers, in which case I kind of agree. There's lots of microbrand divers but for some reason it just seems like there's not many divers in that range from non-japanese brands. I can't think of a single good popular Swatch diver below the Longines/Omega tier.

The boring and cheap option is a timex weekender. It won't look bad whatever you're wearing.
A Seiko 5 (something like an SNK809) looks alright, and is a good entry into mechanical watches (which come with their advantages and drawbacks).
If you're into the diver look, the Casio MDV106 is a cheap quartz one.
You could get a chrono but I don't know much about cheap chronos to be honest.
Also, don't forget that with most watches, you can very easily change the band/bracelet yourself in a couple minutes and you're not stuck with what it comes with, so you can dress a watch up or down, or change the colours to suit what you're wearing or whatever. New bands can be pretty cheap to (from like $1 for a chinese nato, $15 for a decent leather strap, up to a lot of money for good metal bracelets or great leather straps).

Not really. Seiko gives you saphire-domed watches way under $500, you need to go toward $900 with at least hamilton and steinhart to get that. Seiko gives you a choice of complications, from perpetual to high accuracy, at under $500 - you get NONE of that with the hamilton or the steinhart even toward the $1k range. The only thing you're paying for is looks, and if that's what matters to you, get a cheap omega (which have better movements than hamilton or steinhart anyway), or a timex if you're into quartz.

They're typically fashion watches. Big, crowded designs, very in your face, not so interesting as far as movements and all that stuff go.
Some of them are actually not that bad.

It's still a 6R movement, I think it should just be a regular 6R15 modified to have a power reserve and a different date display. They really try to keep all of their movements very similar to each other so there's a lot of movement variants that are just the common base movement with some complications slapped on. That's one of the urushi dials, right? You certainly won't find any other brands doing urushi so there won't be anything super similar but I guess you could look at Longines which might stretch your budget a bit but they also have lots of nice dressy watches in very old school classic styles with Roman numerals and stuff.
