I'm trying to get a hackintosh running via my laptop.
I'm following the instructions on tonymacs86.com and it says to download El Capitan through the app store.
Since I don't own a mac, I downloaded a VMware image and successfully booted it up.
I'm downloading the image through the App store now.
Is this the correct way of doing this for my situation or is there an easier way of doing this?

What laptop?
Hackintoshing laptops are harder and requires more trouble shooting. El captain doesn't seem to even have a full version of multibeast, I would stick with Yosemite until you see support for el captain.

OP, carefully google "your laptop + hackintosh", check the forums for kexts (basically drivers), and prepare to spend not only this evening, but maybe also a couple more to make it work.
I've literally spent 10 hours before I could say "yup, everything is working and I'm sure the OS will boot next time I turn the computer on".
But once you do this, it's stable as fuck.
