Tor's by far the best proxy, and its hidden services have all the big markets and so on.
I2P is technically interesting, and there's a bunch of neat stuff happing on the network. It also has bittorrent. It makes a terrible proxy though, as wasn't designed for it.
Freenet's all but dead.
rms and /g/ endorses GNUnet.
