not quite the Linux you're looking for, but you can install Cyanogenmod (custom freetard version of Android) on several phones and tablets out there.
I had fun installing it over the stock ad-infested Amazon version of Android that came with my Kindle Fire tablet.

It's definitely not Linux but I think it's really cool that those amazon button things are hackable. You could have an Internet connected button with a little led for pretty cheap.

i dig it but i've got about a dozen little esp8266s laying around unused. can't do much hardware hacking because i live in a dorm and they don't allow heating coils so soldering is basically out of the question.
