any language at all can be used to code backend server stuff. Node became a meme because all the webdev hipsters keep making noun.js and gush about how great js is. Companies know they can hire a million hipster js shits and get work done in both client and server side software.

Those are all large companies and it only takes one person doing one project with node.js to be able to say "company x uses node.js" even if it is in no way dependent on it. They probably all have some ColdFusion and Drools project lurking around the depths of their source control. Doesn't mean they committed to them.
