I'd honestly probably spend more than half of it on 3~4 really good monitors of varying resolutions so I can have a great gaming monitor, great photo/video editing monitor, big programming etc monitors

Then just buy an i7, 32GB of RAM, at least two graphics cards with a motherboard that supports 16x in both lanes so that the gaming monitor can sit dedicated on one graphics card and at least one PCI-e SSD.
