I know for a fact you can use your device as an input device. Like two years ago I used it as both a keyboard, a gamepad and a mouse. That was without a jailbreak tweak, it was literally an app off the AppStore.
The only current things jail broken iPhones can't do is OTG. That's because power output is handled by the kernel, and isn't easily modified by tweaks. iPads can do this with the camera connector kit afaik.
