I'm not even supporting the "only FOSS games, ever" but a lot of games are online games, which require support, servers, bandwidth and so on. They wouldn't work if everything was run only on client computers. So maybe the client side of the game could be FOSS in those cases.

Not sure if that is enough, though.

Make the entire code be free/libre, etc, put all the assets behind a paywall.

People can mod your game easier, keep it working as time passes by, and fix bugs.

Downside is that you can't really do DRM too well this way, but DRM never works anyway.

I don't mind the interface or graphics, but the game itself is a pain in the ass to figure out how to play and I end up feeling guilty that I'm spending a ton of time learning to play a game instead of something useful and quit.

I watched another 2 hours of videos and after about 45 minutes with the game I understood the basics. Now whether or not my first fort will survive the first year is a totally different story.

Video games are not included in the Stallman bible as needing to be free.

Stallman does not disapprove purchasing software so long as it doesn't infringe on your freedoms. It's very simply stated on his webpage.

1: Grow and brew plump helmets constantly, make sure cooking their seeds is forbidden in your kitchen menu. Keep a cat in your food stockpile to kill vermin.
2: Protect your main entrance with a drawbridge that opens inward to become an impassable wall. Put the lever that operates it in your dining hall so when the time comes whatever asshole is sitting around can pull it within 3 seconds. Build a short kill tunnel next to your real entrance filled with weapons traps and maybe a cage trap or two, if you have no worthwhile weapons then stock them with menacing wooden spikes
3: Put decent statues somewhere that every fucking dwarf walks past like a stairwell. Looking at a neat sculpture may provide half of them with the little boost they need to not tear off all their clothes and bite their neighbor's face off after their baby inevitably gets eaten by a cave spider

Your fortress is now protected from starvation, siege and temper tantrums, meaning it is virtually infallible until you fuck up out of sheer ambition or boredom.

Video games are not a service, they don't run in the cloud, you need to have them installed therefore you need the source code according to Stallman and freetards alike.

Free software =/= Gratis software

A program is free software if the program's users have the four essential freedoms:

The freedom to run the program as you wish, for any purpose (freedom 0).
The freedom to study how the program works, and change it so it does your computing as you wish (freedom 1). Access to the source code is a precondition for this.
The freedom to redistribute copies so you can help your neighbor (freedom 2).
The freedom to distribute copies of your modified versions to others (freedom 3). By doing this you can give the whole community a chance to benefit from your changes. Access to the source code is a precondition for this.

So OP's question is legitimate. How would game developers earn money when their game engines can be freely copied multiplied and shared? Especially in today's industry where it takes you millions of dollars to develop your complex game and then someone can just freely take all your effort and modify it and share it.
