It's not long, only about 50 pages, and organized in a way that you can easily find only the information you're looking for.
Alternatively, you can even just look up the specific codec you want to know the parameters for and read the ffmpeg page for that.
e.g., just search "ffmpeg h.264" on Google, and the first result will be the "ffmpeg h.264 encoding guide". ffmpeg I'd such a great and easy to to use.
