Ubuntu, mint, elementary, deepin, ubuntu gnome, xubuntu (very lightweight). Avoid stuff like Arch, Gentoo, Debian, as they will pose lots of problems for new users. The first ones will just work out of the box

Just general computer use. I do a lot of file handling (moving, organising, renaming etc) so I suspect it'll help with that. But I'm really just interested,and I have the time to sink into it

*buntu (any ubuntu flavor) or Fedora in a virtualbox.

Or set up an Amazon Web Services free tier VPS and use putty to log in and learn it that way. You get a free year.

make it a point to learn to do command line stuff. It will seem insane at first, but is worth it, I promise.

I really recommend the VPS option.
