That most likely comes from artificial sweeteners like aspartame, sorbitol, or xylitol. For me xylitol is the worst. I think it has something to do with your intestinal microflora feeding on the sugar. I'm going to see a doctor who specializes in the brain-gut connection soon (I have bipolar disorder as well) so I suspect to find out soon that I have some fucked up microbes in my intestines.
