I like sumo since it feels better on my knees.
On a related note, should I as a 6'7" guy be deadlifting 2 plates? I began the conventional way but switched cuz my knees were feeling wonky
I'm 5'7.
Sumo Deadlifts feel 1000 times more natural to me than Conventional.
I don't understand why, but I feel the same way about Front Squats. Front squatting feels so fucking stable and natural to me, where as Back squatting feels very awkward.

Deadlifting is over-rated as a "whole body" muscle builder. But it's definitely EASILY the best lift for building a solid lower back and hamstrings.
Just doing 3x3 deadlifts a few times a week did 10000x more for my lower back and hamstrings than any leg curls or back extensions ever did, and it's just 3 sets of 3, takes literally no time.
If you want symmetry (ie actually have developed lower back and hamstrings) I'd recommend doing them. Also, you can develop over-powering quads if you focus so much on squatting/legpressing, and not doing any deadlifts.

The obvious answer to OP is that you do whatever one better fits your situation and goals. For a lot of people that's going to be conventional (or, almost as often, variants like block pulls or RDLs) but sumo has plenty of uses.
