What are your preferred assistance lifts for the big 3 three lifts?

GHR, paused squat

>deadlift
Suitcase deadlift, paused DL

>bench press
Pin press, plyo push-ups

Squat: Paused squats, front squats

Deadlift: Deficit deadlifts (also axle deads)

Bench: Cambered bar bench

Never got shit from anything done off pins, for whatever reason.

It can. I'm somewhat lucky in that between my high arch and relatively close grip I can use it without pain. Not something I'd use with a flat back or super-heavy weight.

pause deads, and deficit deads. also stiff legged to get them hamstrings involved

close grip, incline. weighted dips help as well, pause bench at 80 %

The best accessory for Bench is "Bench more".
And if you want to do something else, change your grip, pause, change your ROM,...
Same for squat and deadlift.
Everything else is fluff and puff

Weak off the chest? Do spoto or db bench
Weak at lockout? Do paused cgbp
Weak quads? Do frontsquats
Weak posterior? Do Rdls/sldls
Weak at dl lockout/grip? Do rack pulls

The exception to this (for bp/thepress strength) would be lat work
