you don't. you use a TDEE calculator to get an initial value, then you adjust this value based on what happens to your body weight/composition from week to week.

You don't. It's variable. It's not exactly a scientific priority to find out precisely how many calories are burned by people doing the same exercise in various different ways, with different recovery times and speeds in which the exercises are performed.
If you are cutting you assume your TDEE is the same as that of a person who doesn't exercise, and aim for a ~200 calorie deficit.
If you are bulking you assume your TDEE is the same as that of a person who exercises with semi-regularity and aim for +200.

What I posted was 2 1/2 hours of lifting weights and it's suggesting I burned 750 calories. I suppose it just used my heart rate to calculate it.
