unless your gym has an incredible range of dumbells, they're going to mess with your programming at some point. also the setup with sufficiently heavy weights to actually give you progress is very tedious with dumbells because of no rack.

If you're 120kg, I'd suggest cutting way down while lifting to preserve muscle, then once you're starting to see some definition you can assess where you want to go from there.

You can make it Pham, although bulking from where you are is a lousy idea; get your bodyfat in the 15-20% range and then bulk from there.
