I'm actually thinking of switching to a diet of maybe 80% potatoes and milk, then just supplementing the rest with some eggs, beans, some meat etc. Mostly because I'm poor but also because of convenience.

Yes just rinse them beforehand. I think they taste better with the skin on usually. More nutrients or some shit as well.
