OP here. I usually put them in the microwave on the baked potato setting to dry them out, then fry them in the skillet until crisp. It works if you don't dry them put, but it's harder to get the potatoes consistently crispy.

No, but maybe it's not a bad idea. I like to mix in a small bit of sausage when I'm in the mood for it, it gives the eggs better taste.
