Kanyes first album was recorded shortly after he was involved in a horrific car crash nearly ending his career/possibly life. His music/life is largely throwing in our faces what we don't want to see...much like the great artist of past Nina Simone, who most likely greatly influenced Kanye. Nina and more recently Kanye present to us (white America) the fact that we were terrible to their people but I also feel that Kanye is embarrassed by much of the black community for still holding on to their past so much it keeps them from being able to find success as a group.
Kanye is a great artist, he makes people feel, maybe it's mostly anger but still a successful artist always makes the viewer feel...

A lot of people who don't know his background and listen to just 1 of his songs might assume he's just arrogant or a douchebag, while he's quite the opposite.

If you start from his first album, you'll notice that despite the idealization of degeneracy (eg substance abuse, sexual promiscuity), his songs still manage tell an inspirational story of how he started his career at a time when nobody believed in him. This was groundbreaking at the time, and it is the reason why The College Dropout is hailed as one of the greatest rap albums at all time.
As you go through Kanye's discography, you start to see the degeneracy being replaced with more meaningful thoughts: My Beautiful Dark Twisted Fantasy is a beautiful (hehe) album that reflects his emotions after being dumped by his fiance and suffering the death of his mother, not to mention the incident with Taylor Swift at the VMAs. Not a lot of people know this, but he moved to Hawaii to isolate himself while making the album and just have time to gather his thoughts. You can tell from the cold lyrics of the songs that he has not lost hope in himself, despite the criticism he was receiving from the world.
His most recent album, Yeezus, is definitely one of a kind. He manages to revolutionize the music world yet again; you can listen to once and you'll know right away that there is nothing like it.

While I agree with most of what you said, a lot of Kanye's albums actually set the trend for production in music that followed (808's is a great example of everyone jumping on vocoder after Kanye). Yeezus was the only exception. In fact it was the first time Kanye didn't really innovate at all.
the industrial grimy dark production was actually being used in underground rap long before Yeezus was released (Death Grips). All Kanye did was take elements of this production style and water it down to make it more listenable. In the end it didn't work because Yeezus wasn't commercially successful, but all he did was take a style and fuse it with MBDTF and simplify it.
Yeezus was Kanye's first lazy album, lazy production and lazy lyrics and lazy story. Kanye didn't have much to say other than he thought people were being racist for not accepting his fashion design.

Undeniably one of his best songs, New Slaves a beautiful piece about social and economic inequality, America, racial stereotypes, and most importantly, consumerism.
The song's title, "New Slaves", is refers to the reality that while African Americans are no longer enslaved by chains, we are all (yes, all of us) now enslaved by consumerism. Being a forum about fashion, I'm sure many people here can relate to it.
Many have criticized Kanye West for being a hypocrite; he berates those who are "Spendin' everything on Alexander Wang", but he himself is known for lavish spending on clothes and other material possessions. Is the song just bullshit that's written to appeal to the masses? Of course not. Actually agree; the production techniques used in the album are nothing new compared to those in his previous albums.
Yeezus certainly wasn't his best, but it wasn't bad at all.
It still has some good songs: most notably Black Skinhead (which I don't doubt for a second will become a classic), Blood on the Leaves, and of course, New Slaves.

Moving on, another Kanye song I really love is "Welcome to Heartbreak", from his 2008 album 808s & Heartbreak. I think this song is really underrated.
It's a short song; it's not filled with catchy rhymes or anger like some of his other songs. The strong sound effects he is known for are stripped away, leaving his feelings naked and vulnerable.
The song is cold. Haunting.
Kanye has everything, but he still feels like he is missing something in life:
"My friend showed me pictures of his kids /
And all I could show him was pictures of my cribs /
He said his daughter got a brand new report card /
And all I got was a brand new sports car, oh"
Somehow, you are able to sympathize with him. Very few of us will ever be as influential, rich and famous as he is, but his message still hits home very hard:
