Im the guy in the photo. Just got mousey brown hair colour (natural) and I never used to use any product when this photo was taken. Using matte fibre shit though does just as good a job. The photo was taken pretty soon after a cut and I just used to put my palm on my head a move it in circular motion. It would give it a slight backcomb effect which gave it the messy volume. I use incorrect terminology but I tell my barber to do a 2 on the sides and the back, sides have a blunt contrast like an undercut, but then get the back faded in. Make sure you get the top textured and leave a but if length on the fringe. Each place cuts different though. I've tried other barbers when moving around and no one seems to get it right apart from the guy I've been getting it cut with since I was a kid. If anyone else can translate into actual haircut terms im sure you'll have better luck

Thinning it is important. Mine is really thick too, and when it grows, it grows outwards before it grows down. As for the side bit, the difference there I think is that the guy on the right has perhaps thicker and obviously darker hair, so he's probably shaved it shorter to compensate a 'fairer' shade, whereas if you have lighter hair, you needn't shave so short that it looks like a buzzcut.
Just another thing too if its any help, the hair you have above the shaved bit: Let it hang downwards. Your stylist and even yourself will be tempted to push it forwards like the other guy in the pic, but it always looks better and is easier to maintain depending on how textured you get it cut.
