501s are slightly less slim, but not unbearably so
the fabric is also different, 511s are composed of a cotton blend while 501s are just plain cotton, which is what you want in denim

not necessarily, i'm the smallest waist size that 501s come in (hell, maybe even smaller) and they look fine on me. if they're a bit baggy for ur tastes u could always just tuck your shirt in, the high rise will visually slim your legs.
