How do I into whittling? Is it incredibly difficult or is it generally easy?

It's like any other learned skill.
You learn how to do it, then you do it, suck at it, then, with time, patience, and practice, git gud.
It's as easy as hard as you want it.

Just takes patience, and practice along with a good sharp knife. Easiest to start learning by cutting the general shape of what you`re trying to make out of the block. Then you whittle it down little by little. Also, a good practice is to actually trace an outline onto each side of the block. This gives you some hard lined parameters to work off of.

Just realize that your hard work will look like shit for a while and just get in the mindset that your next sculpture will look better than the last one. Do this daily and you'll get really good at whittling in no time.
