Z-ton and that Encyclopedia thing kinda did the majority of the heavy lifting gettin it more popularized but even then it's been a slow crawl, hopefully the Monster Musume adaptation garnered enough attention to get more artists drawing monster girls.

Actually it's sort of what horse vaginas do. For one thing, sexual organs already do sort of respond to each other and try to fit form as much as possible in most mammals. Horses in particular contain a lot more muscle than human reproductive organs, and can thus contract more easily. This also has the benefit of reducing time spent in labor for them.
