You are also stating the same point on different lines more than once, which doesn't add much weight to your argument. I'm not saying that she's a bad character, just that your "depth" seems to mostly just be slowly revealing information about her.
At best, it is showing some foreplanning in how well the aspects of her personality tie together - Pearl is super attached to Rose because Rose rescued her, she is resentful of Steven because he is the result of Rose leaving, she hates that aspect of herself, and she is an obsessive perfectionist because of all the above. It fits together well and sensibly, and is a bit impressive that you can remove some aspects of it and still have a complete character.

Really? Let me present a counter argument then:
Greg is the only person that was anywhere near as close to Rose as Pearl was and the only one still hung up over her death. If they could get over that barrier of dislike they're probably the only other person that can understand how the other feels about losing her, same as Greg is the only one that can understand how Connie feels about working alongside the Crystal Gems.
Pearls major arc is and has always been about her coming to stand on her own two feet and grow beyond Rose command to do things because she cares about them herself, some of that involves understand humanity on some level and come to love them for their own sake rather than Roses, as it stands she has contempt issues with them as an entire species (See her little Reynaldo speech for more on that), she literally doesn't understand what Rose loved about them.
And the perfect example of what Rose cared about would be Greg. Pearl could easily go into it simply hoping to learn why Rose acted the way she did only to end up swept up in it.
And last of all? Pearl has serious identity issues, her only worth in her own eyes is as Rose servant (And Stevens Mother) basically.
Imagine how much it'd effect her, to be cared for by someone as much as that same person cared for Rose, not as a 'you'll do' substitute, but as an equal to her.
It'd be the thing that finally lets her accept that she's worth something to someone, something like that.
Pearls arc is about growing beyond Rose shadow and learning to be happy for herself.

In a show like this, I think that corner would mean revealing all the aspects of a certain character. Knowing all there is to know about why they act how they do and such.
Personally i think it'll probably be an arc that'll be heavy on pearl & greg's relationship in the past with jump-forwards to the present. Maybe Pearl and Greg have a falling out on something and this makes Steven decide to interview the older townies(vidalia, mayor dewey, Nanefua, etc.), garnet, and amethyst in order to find out more about their past, and it ends with them getting over it and being cordial again.
